Roots of wine making in the stunning ‘Burgundy Wine Region‘ stretch back to Celtic times, and it is likely that vineyards already dotted the landscape when the Romans conquered Gaul. Within a few centuries, these plots of land were being identified by name.

The Church played a defining role in shaping Burgundy’s winemaking legacy. Beginning in the eleventh century, the Duke of Burgundy granted vineyards to the monks of the Abbaye de Cîteaux, who went on to cultivate some of the Côte d’Or’s most celebrated sites, where Pinot Noir still thrives today.

Wine not only sustained the monasteries spiritually, but also financially, as the growing trade offered a steady source of income. While little documentation survives of their exact winemaking techniques, evidence from iconography and medieval writings paints a vivid picture of the monks’ deep connection to the vine.

In Burgundy, the Cistercian monks literally tasted the soils of the Côte d’Or and determined by a centuries-long process of trial and error, beginning in the twelfth century, which cultivars were best suited to grow on specific plots of land called a terroir.

It was this concept of terroir, the recognition that each plot of land produces wines of distinct character, that became Burgundy’s hallmark. Generations of observation revealed how soil, elevation, slope, wind, and vine selection combined to shape unique expressions of wine. By the 1700s, Burgundy’s villages were being documented for their individual flavour profiles, and Cistercian monk Dom Denise even outlined early ideas of classification, noting that the finest wines came from vines planted midway up the slopes, rather than at the hilltops.

Advances in transportation during the eighteenth century allowed Burgundy’s wines, once known primarily among the nobility and local circles, to achieve international acclaim. The French Revolution of 1789, however, transformed vineyard ownership. Estates previously held by the Church and nobility were seized, divided, and sold. The subsequent Napoleonic Code mandated equal inheritance among heirs, resulting in the famously fragmented vineyard ownership of Burgundy today, where a single climate may be split among dozens of proprietors.
